Remove internal organs from soft-shell turtle, wash and cut into pieces.

Cut the seasonings and set aside.

Add more oil to the pot and heat it up, add the turtle pieces and stir-fry for two to three minutes.

Add seasonings and stir-fry until fragrant.

Add cooking wine, light soy sauce, and dark soy sauce and stir-fry until coloured.

Add water, bring to a boil over medium heat and simmer for twenty minutes.

After twenty minutes, add salt and chicken essence to taste, reduce the juice over high heat and add green onions.

Plate.
