Steps

  1. Remove internal organs from soft-shell turtle, wash and cut into pieces.

  2. Cut the seasonings and set aside.

  3. Add more oil to the pot and heat it up, add the turtle pieces and stir-fry for two to three minutes.

  4. Add seasonings and stir-fry until fragrant.

  5. Add cooking wine, light soy sauce, and dark soy sauce and stir-fry until coloured.

  6. Add water, bring to a boil over medium heat and simmer for twenty minutes.

  7. After twenty minutes, add salt and chicken essence to taste, reduce the juice over high heat and add green onions.

  8. Plate.
