Egg Zucchini Patties
Overview
I have been cooped up at home for several months, eating this and that every day without exercising. Today I am making a relatively light meal, with a nutritious mix of meat and vegetables. Beauties can eat as much as they want without worrying about gaining fat, and even people with disabilities can easily make it!

Wash the zucchini, remove the heads and tails, then cut into 1cm thick slices.

Use a smaller spoon to scoop out the center bit by bit.

Just dig it in one piece.

After everything is processed, put it in a pot of boiling water and blanch it for one minute. Drain and set aside.

Add pepper, five-spice powder and cooking wine to the minced meat, mix well and then add a little salt (adjust the saltiness according to your own taste). Add the diced carrots in advance and add the chopped green onion.

You can add a little chicken essence if you don’t like it, but you can add four eggs. (You can beat three first to see if it becomes a thicker paste. If it is still relatively dry, add one more)

Stir into a paste and set aside.

Place the zucchini rings in a non-stick pan and fry over low heat until the top is slowly solidified. Then flip over and fry the other side for about a minute before serving. (If you have an electric pan at home, you can use an electric pan to make it without turning it over.) I don’t want to take it, so I just use a non-stick pan to make it. You can put a little oil or no oil.
