Wash the celery, cut into sections and set aside.

Pork rinds, set aside.

Blanch the pig skin in water to remove dirt and scrape off the fat.

Cut into thin strips.

Add cooking wine to the water, boil again, take it out, rinse it in cold water, take it out again, drain the water and put it in a basin.

Cut onion and red pepper into sections, set aside.

Add an appropriate amount of oil to the pot, add the pork skin, and cover the pot with a lid. The pig skin is a bit scary when exposed to oil and will splash. (It is best to add more oil and fry the pig skin a little.) After two or three minutes, add the green onion and pepper and stir-fry until fragrant.
