Fried rice noodles with lettuce

Prepare rice noodles and pickles.

Soak the rice noodles and drain the water. Wash the lettuce and cut into small pieces.

Heat the pan with oil, a little more oil than usual to prevent the rice noodles from sticking together.

Add pickles and rice noodles and stir-fry for 1-2 minutes, the rice noodles will be cooked easily. Add light soy sauce.

Add chopped lettuce and salt.

Use chopsticks to scratch (to prevent sticking) until the lettuce changes color, and it can be taken out of the pan in about 1 minute.

It’s a very quick staple dish. My kids don’t like spicy food, so adding chili 🌶️ will make it more flavorful.
