Overview
For breakfast today, I made hedgehog bean paste buns. My son said he didn’t want to eat them at first, but he ate one anyway. It tasted pretty good. With a cup of purple sweet potato and tremella dew and a stick of corn, it was a rich breakfast.

Dissolve the white sugar with warm water. When the temperature drops to about the same as the temperature of your hands, add the yeast and let it rest for a while. Then slowly add it to the flour, then add water in batches, knead the dough, and ferment.

Ferment until doubled in size. To test, you can dip your finger in dry flour and poke a hole. If it does not shrink or collapse, it means it is ready.

Exhaust the air, knead it to the original size again, then roll it into long strips, cut into small pieces, and knead the pieces into a round shape.

Take a portion, use a rolling pin to roll it out thick in the middle and thin on the sides, then put the bean paste filling on it.

Pick it up like a bun and pinch the edges tightly.

In turn, roll the bun into an oval shape, then roll one end into a thin shape, and then pinch out a flat pointed mouth shape.

Use scissors to cut out the hedgehog's thorns on its back, and dip two black sesame seeds on both sides of its pointed beak to make eyes.

Brush the bottom of the steamer with oil, add the steamed buns, and allow for secondary fermentation. About 30 minutes

Put the pot on boiling water and steam for about 15-18 minutes. Turn off the heat and simmer for two minutes. Then you can open the pot and make a few pig's trotters steamed buns. Doesn't it look like?!
