Steps

  1. Wash the lamb chops and pat dry. Preheat the oven to 425 degrees.

  2. This is all the seasoning powder to use. From left to right: smoked juice (adds a smoky flavor to the meat, but does not need to be smoked), cumin seeds, allspice, black pepper, onion powder, garlic powder)

  3. Put half a tablespoon of butter into a baking pan and melt in the microwave for 10 seconds. Then stir the butter evenly, add the lamb chops and coat the butter evenly.

  4. Sprinkle evenly on both sides: 1 tablespoon smoked juice, 1 tablespoon cumin seeds, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 teaspoon salt, 1 tablespoon black pepper, and 1 tablespoon allspice. The oven should be preheated by this time. Place the baking sheet into the top rack of the oven (the fat side) and bake for 15 minutes.

  5. Take it out after 15 minutes and add: 1 tablespoon cumin seeds, 1 tablespoon garlic powder, 1 tablespoon black pepper, and 1 tablespoon light soy sauce. Then flip over and return to the oven to bake the back side for 10 minutes.

  6. Take it out after 10 minutes and add: 1 tablespoon cumin seeds, 1 tablespoon black pepper, 1 tablespoon garlic powder, 1 tablespoon light soy sauce. Then flip it back and place it back in the oven for 5 minutes.

  7. After 5 minutes, take it out and cut the whole rack of lamb chops into cubes. Then add: 1 tablespoon cumin seeds, 1 tablespoon black pepper, and 1 tablespoon garlic powder. Place back in the oven, do not turn over, bake for 5 minutes, turn off the oven after 5 minutes. But leave the lamb chops in the oven for 5 minutes.

  8. After 5 minutes, take it out and sprinkle with chopped green onions (if you like spicy food, you can sprinkle with chili powder at this time), then use a spoon to pour the oil baked in the baking pan onto the chives, and you can put it on the plate and serve.
