Remove the head and internal organs of the small yellow croaker, cut the fish into two pieces with a kitchen knife, add a little salt, rice wine, and ginger slices and marinate for fifteen minutes! Then put it in a colander to dry (it takes about two hours)

Pour cooking oil into a pan, heat it to 70% heat, then fry the marinated small yellow croaker until browned, remove and control the oil and set aside!

Leave a little oil in the pot, add chili pepper and minced garlic and saute until fragrant

Pour in the fried small yellow croaker, stir-fry, add chopped green onion, and sprinkle evenly with salt and pepper!
