Strawberry mousse cake
Overview
My favorite is the strawberry mousse cake. Don’t think about losing weight for the time being, just indulge in it once in a while. A small piece of cake actually contains four layers of taste: sponge cake base, vanilla bavarian, strawberry mousse and strawberry glaze.

Add one egg to the caster sugar and beat until stiff peaks form.

Add the egg yolks and continue beating with a whisk for one minute.

Sift in the low-gluten flour and mix evenly.

Pour the mixed batter into the mold.

Unmold the baked cake and cut out two slices of cake using a mousse mold.

Prepare the vanilla bavarian ingredients.

Add ten grams of caster sugar to the egg yolks and stir evenly.

Pour half of the heated milk into the egg yolk paste and stir quickly evenly.

Pour the evenly mixed milk and egg yolk paste back into the milk pot and continue to heat over low heat.

Stir while heating. When thickened, stop the heat. Add soaked gelatine slices and a few drops of vanilla extract. Stir evenly after the gelatine slices melt.

Add 10 grams of caster sugar to the cream and beat until half-flavored, mix with the cooled egg yolk paste in the previous step and stir evenly. The vanilla bavarois is ready.

Pour half of the vanilla Bavaroise onto the cake slice.

Arrange a layer of fresh strawberries cut in half.

Pour in half the vanilla bavarois to cover the strawberries. Refrigerate for half an hour.

Next, make the strawberry mousse: put strawberries, fine sugar and lemon juice in a pot and cook until thick, then turn off the heat, add soaked gelatin slices, stir evenly, and use a food processor to blend into strawberry sauce.

Beat the light cream until half-flavored, add the strawberry sauce prepared in the previous step, and stir evenly. The strawberry mousse is ready.

Pour the strawberry mousse on top of the set vanilla Bavaroise.

Then make the strawberry glaze: dice the strawberries and sift them to extract the juice.

Add melted gelatine sheets and mix well.

Pour the glaze on top of the set strawberry mousse.

Place in the refrigerator to chill, then cut into pieces and serve after solidification.
