Chives and fried pancakes
Overview
This pastry pancake can be said to be a pastry without filling, that is, the pastry simplifies the preparation. Some salt and green onions are added to the pastry, so it can also be called scallion pancake. This sesame cake has distinct layers, is soft and chewy, and extremely crispy. The recipe comes from my cousin’s kitchen with slight modifications

Prepare 400 grams of flour

Add 5 grams of yeast to warm water and stir to dissolve the yeast

Knead into a smooth dough, cover with plastic wrap and let rise for 30 minutes

Pour 40 grams of salad oil into the pot, add the scallions and stir-fry over low heat until the scallions turn brown

Prepare another 100 grams of flour

Make a well in the middle of the flour and pour in the scallion oil

Knead into pastry dough

Press into a flat shape and add 10 grams of salt and knead well

Then add chopped green onion

Knead into scallion oil pastry

Shape into long strips and divide evenly into eight portions

Roll into a ball and cover with plastic wrap and set aside

Take a portion of 75 grams of dough and flatten it into a scallion pastry

Roll out into a rectangular shape

Then roll it into a rectangular shape

Another 30% off

Finally, roll it into a rectangle again

Finally, fold it into thirds again and fold it three times

Once everything is done, cover with plastic wrap and let rest for 10 minutes

Take one portion and roll it into a rectangular shape. Brush with a layer of sugar water

Place the side brushed with sugar water into the sesame plate and press it gently

The whole cake is evenly covered with sesame seeds

Make all the pies in sequence, preheat the oven, and bake on the middle shelf at 180 degrees for about 25 minutes
