Stir-fried shredded lotus root with green garlic
Overview
Green garlic and lotus root are both good during this period. The lotus root can be stewed in soup, fried in lotus root boxes, and lotus root balls. The slices or shreds that can be stir-fried or mixed in a simple way are also very good. It is also very good to add some tender garlic sprouts.

Peel and wash the lotus root.

Cut the lotus root into two pieces, with the cut facing down on the cutting board, slice and shred it, soak it in some white vinegar with water, and change the water in between.

Cut the washed green garlic into small sections with a diagonal knife.

Heat oil in a pan, add shredded lotus root and stir-fry. Add a little water while frying.
