Put the chicken breasts in a pot with cold water, add onions, ginger, garlic, Sichuan peppercorns, and cooking wine and bring to a boil. Simmer over low heat for a while. If the chopsticks can be easily pierced, take it out of the pot and put it into cold water.

After the chicken breasts have cooled. Use a steak hammer to break it up. For better tearing and better flavor, you can also use the back of a knife.

Tear into shreds and set aside.

Dilute the sesame paste with water, add in the very fresh flavor, sugar, salt, and spicy oil (I have written the method for this.) and mix into juice.

Cut the cucumber into shreds and place it on the bottom, add shredded chicken, pour in the prepared juice, and top with chopped peanuts. That’s it.
