Childhood memory - Fried noodles and beans on February 2

Overview

There is an old saying in my hometown: On the second day of February, the dragon raises its head and you will not get acne if you eat noodles. Since childhood, every second day of the second lunar month, no matter how busy my mother is, she always makes time to fry noodles and beans for us. She hopes that the whole family will be healthy and safe in the coming year. And we took the beans we made at home and went out to exchange them with the children. The name was: "Yu Rou" (transliteration of the local dialect). I don't know the exact words. Anyway, it means that each other's families can have good weather in the new year and exchange blessings. But what I care more about is that each child’s family makes different beans with different tastes. Today, many years later, the "Yu Rou" among children is gone, but the sweet smell is around me leisurely, just like yesterday... Now every February 2nd, I follow the same example and make some beans to celebrate the festival, not for the sake of the sweet taste, but more for the beautiful memories that I don't want to forget...

  1. Prepare the following: 200 grams of flour, 2 eggs, sugar: about 50 grams (add more if you like sweetness) butter (originally soybean oil): 10 grams, milk: 50 grams (you can also use milk powder instead of water, which will have a more milky flavor) black sesame seeds: appropriate amount

  2. Mix all the ingredients together and knead into a smooth dough. The drier dough will make it crispier. Let rise for 30 minutes

  3. After the kneaded dough is rolled into thin pancakes (thinner ones are easier to cook and crispy), cut into flag pieces of the desired size. Let the panel air dry for a while. (A reminder here: When rolling out the dough and cutting the chess pieces, you must use more dry powder, otherwise it will stick.)
