【Northeast】Chicken Soup Tofu Skewers
Overview
Chicken soup and tofu skewers are a specialty snack of the Hui ethnic group in Jilin. The ingredients are chicken skeleton and dried tofu (also called dried tofu or tofu skin in some places.). When making, skewer the dried tofu (soybean skin) with toothpicks. When eating, take out the toothpicks, brush the tofu skewers with a little chili sauce and put them into a bowl, and add a little chopped coriander. Add garlic juice, vinegar, minced chili pepper and finally pour chicken soup and it's ready to eat. I woke up early and was in a hurry, so I didn’t use toothpicks to skewer the bean curds, so this was a simplified version.

Cut dry tofu into diamond-shaped pieces

Wash and cut the chicken carcass into pieces and blanch them in water. Heat oil in a pan, add the chicken carcass and stir-fry. Add light soy sauce, pepper powder, and chopped green onion and stir-fry until fragrant

Add water and salt. After the chicken pieces are stewed, add dry tofu and cook for another 20 minutes to let the tofu skin absorb the flavor. Add chicken essence and turn off the heat.
