Overview

Every time I buy pork at home, there are leftover pig skins. It feels like a pity to throw them away. I wash the pig skins, dry them in the sun, and fry them in oil to make dry pig skins. When the weather is hot, stir-fry pork skin with sour bamboo shoots and chopped peppers. It tastes sour, salty, and slightly spicy, and goes well with rice.

  1. Put a small amount of oil in the pot, add the soaked pork skin, stir-fry evenly, and remove.

  2. The pot after taking out the pork skin is still relatively oily. Add the sour bamboo shoots and chopped peppers directly, then add two bowls of water, a spoonful of soy sauce, and bring to a boil over high heat.

  3. Add the fried pork skin, bring to a boil over high heat, then turn to medium heat, cover the pot and simmer for 5 minutes.

  4. Add a little salt and chopped celery, stir-fry over high heat to reduce the juice.
