  1. Cut the dragon fruit into cubes and set aside

  2. Soak the gelatine sheets in ice water to soften them. Use room temperature water to prevent them from melting in advance.

  4. This is whipped dragon fruit juice.

  5. Pour ice water everywhere, put hot water in the pot, and melt the gelatine sheets over the water.

  6. Squeeze lemon juice into the dragon fruit juice. This is because the gelatin sheets are made of fish bone glue and have a bit of a fishy smell. Adding lemon juice can remove the fishy smell, and add a spoonful of honey to increase the taste of the jelly.

  7. Slowly pour the melted gelatine water into the prepared juice, stirring while pouring to ensure uniformity.

  8. Cover with cling film and place in the refrigerator to rest while the gelatin sheets slowly allow the juice to form.

  9. After 5 hours, take shape. You can sprinkle it with your favorite raisins or nuts!
