Jam Sandwich Cake
Overview
The cake I made today is not only filled with jam, but also fresh strawberry juice is added to the cake body. It can be said that the sweetness of strawberry is present from the inside out. Because I used a heart-shaped cake base, I was reluctant to cut it anyway, for fear of splitting the heart into two, so I didn't take pictures of the cut sides.

Puree strawberries in a food processor

Add 20 grams of sugar to the egg yolks, mix well, then add butter and mix well

Then add strawberry juice

Mix well

Sift in low-gluten flour

Stir into egg yolk paste.

Add lemon juice to the egg whites

Add powdered sugar in three batches and beat the egg whites until they become wet peaks. Use a slightly downward-curved triangle or a straight triangle with a whisk in advance.

Add about 1/3 of the egg whites to the egg yolk batter and mix evenly,

Pour back into the remaining egg whites

Mix well.

Put the mixed cake batter into the mold. I used two 6-inch molds and a small mold, making three in total

Preheat the oven to 160 degrees for 10 minutes and bake in the oven for 40 minutes.

Turn the baked cake upside down, let it cool and then remove it from the mold

Use a heart-shaped cake base and cut it evenly into 4 slices

Apply Kewpie strawberry jam and mango jam respectively. I originally planned to use blueberry jam, but found that it was not enough, so I used homemade mango jam instead

Add light cream to powdered sugar

Then stack several slices of jam-smeared cake, decorate with whipped cream on top, and finally put a few fresh strawberries on top. It looks good.
