Steamed cake - no baking, no oil, no heat, steaming to welcome the New Year
Overview
I have long wanted to make steamed cakes. No oven or oil is required, just eggs, low-gluten flour and sugar. I have researched several recipes online, including those without beating eggs and adding baking powder; there are also chiffon cake recipes that use whole eggs and only egg whites. I was lazy and did the first method, which failed directly. I don’t know how others did it. The second time I made it, the whole egg was whipped, and it showed a slight shine. The surface of the finished product was a little fluffy, but there was a dead end inside. The third time I changed the method of separating eggs from Qifeng, I went and the steamed stuff looked like rubber bands. The cook is so willful that after the third failure in the morning, he made another whole-egg version one afternoon. Well, you will see the result right away. To sum up, the reason why the second time was unsuccessful was that the eggs were not beaten enough; the third time Qifeng's method was probably due to too much water.

Pour the batter into the mold and knock out big bubbles. I used a six-piece cake mold with a paper tray inside.
