Prepare the ingredients. Cut the potatoes into cubes, soak them in water and drain them (in order to remove the surface starch). Soak the ribs in water for a few minutes, soak out the blood, wash them and drain them. Other materials are ready

Blanch the ribs in boiling water (remember to add ginger)

Put oil in the pot. When the oil is hot, add the prepared dried chili peppers, ginger, garlic, star anise, and cinnamon until fragrant. Add the spareribs and stir-fry. Pour in the cooking wine

Fry the ribs until slightly brown, add the potatoes, stir-fry for a while, add salt, light soy sauce, dark soy sauce, and thirteen spices, then add water until the water level just covers the ribs

Pour it into a pressure cooker and cook for ten minutes (you can also use a pot to simmer over high heat, but I prefer it. The texture produced by pressure cooker is also faster

After pressing, pour into the pot, add appropriate amount of sugar, and reduce the juice over high heat

Finally, remember to add the chopped green onions and it’s ready to go
