Blackcurrant Cookies
Overview
This is my first time trying to make cookies. The common way is to use a piping bag to shape them into various shapes. I don’t have a piping bag myself, so I used a mold to cut out the shapes today. It feels good! The overall process is actually not time-consuming. The main time-consuming efforts are concentrated on steps 3 to 6. If the whole process goes smoothly, it can be completed in half an hour.

Cut the butter into small cubes and let it soften at room temperature

Wash the blackcurrants, remove the stems and chop them into pieces for later use

Beat the softened butter with a whisk

Add sugar and continue beating

Beat the eggs into egg liquid

Add the egg liquid to the beaten butter in two batches, beating each time until the butter and egg liquid are completely combined

Add flour and diced blackcurrants, stir with chopsticks until the flour is completely moistened and mixed with butter

Then use a rolling pin to roll the mixed flour ingredients into 0.5 cm thick sheets, use a mold to cut out biscuit shapes, place them on a baking sheet lined with greaseproof paper, put the baking sheet into a preheated oven (preheated to 175 degrees), and bake for 10 minutes
