Stir-fried yuba
Overview
This stir-fried yuba dish is my husband’s specialty. The vegetarian dishes taste like meat. It was very popular with the girl, and she asked her father to do it once after a while.

Take an appropriate amount of yuba and soak it 2 hours in advance. Use warm water in a hurry.

Squeeze out the water from the soaked yuba and cut with a diagonal knife into eye shapes. Slice onion, ginger and garlic. Blanch the cowpeas and cut them into sections (temporarily add color, we usually don’t add them).

Add oil to the wok and sauté the onion, ginger and garlic slices.

Add yuba and stir-fry. Add the first cumin powder, 2 grams large.

A tablespoon of oily chili pepper, scoop a tablespoon of oil and chili pepper together.

Stir-fry evenly, then add an appropriate amount of salt, a little soy sauce, and the blanched cowpea segments. Then add 2g of cumin powder for the second time. Stir fry evenly and remove from the pan.

Dice the bell peppers and garnish on a plate.
