Dice the green onion leaves and cut the Thai pepper into rings.

Cut tofu into small pieces, put in salt water, boil for 2-3 minutes, remove and set aside

Beat the eggs in a small bowl, add the golden sauce, and stir evenly.

Heat the wok over high heat, add vegetable oil (a slightly larger amount than usual), heat, add minced meat, reduce heat and stir-fry for 1 minute. Increase the heat to high, add the chopped green onion and egg sauce mixture, and stir-fry for 1 minute.

Add enough water and bring to a boil. Reduce heat to medium and simmer.

Simmer until the soup thickens, add chicken essence and a little light soy sauce. Remove from the pot and top with chopped green onions and Thai pepper rings.
