First, clean the tomatoes, cut them into two halves, remove the middle rhizome, and cut them diagonally. You don’t need to cut them very thin!

Add 3ml of water to the bowl, then break the hen’s eggs into the bowl and stir to make bubbles and set aside

Heat oil in a pot, the oil temperature is 80-90°, then pour the bubbled hen eggs into the pot and turn them over so that they look like they are rolled up (this will make the eggs thicker and more tender). Then put the eggs aside, pour the tomatoes in, (be sure to use high heat), cover the eggs with the tomatoes, add sugar and salt, and continue to stir-fry.

Stir-fry the hen's eggs into pieces and then add water. Stir-fry over high heat while absorbing the juice. The water will be absorbed until almost all the water is absorbed. Then it's ready to serve.
