I always feel that the soybean tofu in the north is very authentic, sturdy, not brittle, and full of bean flavor.

A piece of tofu, cut into about 1.5cm square pieces.

Boil in lightly salted water for 5 minutes.

Control the moisture.

Chop green onions and coriander

Slowly fry the tofu in hot oil in a wok. .

Fry until the tofu instant noodles are slightly burnt. Pour in half a spoonful of soy sauce and salt. A spoonful of oyster sauce. Add a bowl of water. Bring to a simmer.

When the water is almost simmered, add the onions and coriander.
