Peel the eggplant and cut into thin pieces with a hob, cut the tomato into cubes, crush the garlic and set aside

Cut the eggplants and soak them in light salt water for half an hour. Place them in a steamer and sprinkle with starch. Shake evenly until each piece of eggplant is wrapped as shown in the picture

Pour oil into the pot, heat the oil, add eggplants in batches and fry until slightly golden (you can use more oil, the wrapped eggplants will basically not absorb oil and consume very little)

There will be a small hard shell on the surface of the fried eggplant

Leave a little base oil in the pot, add tomatoes and fry until soft, add a small amount of sugar, add fried eggplant and fry for a minute or two, add salt, minced garlic, stir well and serve.
