Mushroom Chicken
Overview
I used whole chicken wings, but you can also buy whole chickens. But the whole chicken was just bones and there was too little meat. It’s still a good deal to buy chicken wings. Haha

Chop chicken wings into pieces, soak in water to remove blood stains, drain and set aside

The required seasonings were not added, I didn’t like the taste of star anise.

Soak garlic leaves and dried shiitake mushrooms. I forgot to take pictures.

Heat the pot, pour in cooking oil, add ginger slices, garlic cloves, and dried chili peppers and stir-fry until fragrant.

Pour in the chicken and stir-fry. When frying the chicken, be sure to stir-fry the water, otherwise the meat will taste bad.

You can listen to the sound when the water is fried. At the end of the frying, there will be a crackling sound of bones. If there is only oil at the bottom of the pot, it means the water has dried up.

Stir-fry the water, add a spoonful of brown sugar, then cooking wine, a little vinegar, light soy sauce, and oyster sauce, and stir-fry evenly in this order. Then add the soaked mushrooms

Pour in water until it is even with the chicken. Add salt after the water boils. Do not add salt early.

When the soup is almost dry, add garlic leaves and MSG. When the garlic leaves are cooked, you can take it out of the pot.
