Bitter Melon Meat with Black Bean Sauce
Overview
Summer is here, and I see fresh and tender bitter gourds everywhere. I feel very appetizing when I see them. However, my husband doesn’t like fried or braised ones because they think it’s too bitter, so he tried the pork belly. My mother just gave me some tempeh, which is a perfect match with the bitter gourds

Steps
-
I chose a longer bitter melon with better flesh. Wash the bitter melon, remove the stem, cut it into sections, use a knife to scoop out the flesh, cut it into a tube, and soak it in salt water
-
For minced pork belly, add a little salt, sugar and soy sauce, stir and marinate until ready to use
-
Gently apply a thin layer of cornstarch to the inner wall of the bitter melon tube, spoon the meat filling into the bitter melon tube, smooth both ends and press firmly.
-
Chop garlic, dice green onion, and cilantro and set aside
-
Chop dry tempeh and mix well with minced garlic
-
Pour an appropriate amount of oil into the pot, heat it until it is warm, add the fleshed bitter melon, fry over low heat until both sides are golden brown, sprinkle with minced black bean and garlic, and fry briefly. Add oyster sauce and corn starch with appropriate amount of water to form a gravy (if you like a sweet taste, you can add a little sugar), pour in, simmer over low heat until the juice is reduced, and finally sprinkle with minced green onion and coriander, and cover the pot

The color is not bad, and the taste of black bean sauce is very fragrant. My husband who is afraid of bitter things also said that it is not very bitter and is delicious
