Remove seeds, peel and wash papaya.

Cut into small pieces.

Put an appropriate amount of rock sugar in a casserole and pour an appropriate amount of water.

Cook until rock sugar melts.

Add papaya.

Simmer for two to three minutes. Mine is a very ripe papaya. If it is a little undercooked, just simmer it for two minutes more. It’s delicious when it’s soft and glutinous.

Sprinkle osmanthus and turn off the heat.
