Nourishing yin and blood nourishing soup
Overview
Meridian distribution of Rehmannia glutinosa properties and flavors: sweet, slightly warm. Returns to the liver and kidney meridians. Functions and Indications: Nourishing yin and blood, replenishing essence and replenishing marrow. It is used for liver and kidney yin deficiency, soreness and weakness of the waist and knees, bone steam and hot flashes, night sweats and spermatorrhea, internal heat and thirst, blood deficiency and chlorosis, palpitations, irregular menstruation, metrorrhagia, dizziness, tinnitus, and premature graying of hair and beard. Raw rehmannia glutinosa is mixed with rice wine and steamed until the inside and outside are black and oily, or steamed directly until black and moist. Referred to as Rehmannia. For cutting into thick slices.

Heat the pan without adding oil, add the chicken heads, necks and buttocks removed, wash and cut the chicken pieces and stir-fry, dry out the water first.

After controlling the water, turn down the heat a little, then add an appropriate amount of salt and continue to stir-fry until oil comes out. Try to stir-fry the oil out as much as possible, but don't stir-fry over high heat until it becomes mushy.

While frying the chicken nuggets, bring a pot of boiling water to the soup pot with sufficient amount of soup. Fry the chicken nuggets to produce oil. Directly put the chicken nuggets into the soup pot, and then spoon off the chicken oil on top little by little as shown.

After ladle clean the chicken fat, add the pitted red dates and wolfberry, bring to a boil over high heat, then turn to medium-low heat, add the cooked rehmannia glutinosa and continue cooking.

After continuing to cook for half an hour, add the round meat and continue to cook the soup without changing the heat.

Simmer until the herbs are completely fragrant. You should first test whether the salt is enough, because we have added salt to the fried chicken. If it is flavorful, there is no need to add more. If not, just add a little more, then turn off the heat and take out the pot.

Although the soup cooked after oil removal will still contain a small amount of oil, it is much better than the soup that has not been treated.
