Put the bread ingredients: milk, eggs, sugar and salt into the bread bucket and stir evenly with a silicone knife

Put the high-gluten flour, place the yeast on top of the flour, and turn on the kneading mode. For about 15 minutes, add butter and continue kneading. When the butter is evenly mixed into the dough, restart the kneading mode for a total of two cycles. Then turn off the bread machine.

Let the bread machine ferment at room temperature (about 20°C) for 2-3 hours until it has doubled in size. Poke a hole with your finger until it does not shrink back.

Take out the dough, knead it to deflate, roll it into a ball, seal it with plastic wrap and put it in the soft freezer of the refrigerator (temperature is about -2 to -7°), and store it overnight.

Make custard filling: mix eggs, softened butter and sugar, beat well

Add milk and mix well

Add cornstarch

Stir evenly. After the water in the steamer boils, put it in the steamer and cover it to steam.

For about 5 minutes, take it out and stir it, then add it and continue steaming

The next morning, take the dough out of the refrigerator. The dough continues to rise about 1.5 times in size, and you can make 32 small bread balls.

Knead the dough into a round shape and deflate it, divide it evenly into 2 doughs, and then divide each dough into 15-16 small doughs. (The other dough can be frozen in the refrigerator, or it can be temporarily refrigerated in the refrigerator to slowly ferment, waiting for the second batch of production.) Cover with plastic wrap and let it rise for 15 minutes

Place the mold on the middle baking grid, put a large bowl of warm boiling water at about 65 degrees below, close the oven door, and ferment for about 2 hours

About 2 times the size, take it out and preheat the oven to 180° for about 5 minutes

Place it on the middle shelf of the oven and bake for about 8-10 minutes. The surface of the bun has been colored. Adjust the temperature to 170 degrees for low heat and 140 degrees for high heat. Continue baking for about 3-4 minutes. The surface is evenly colored and can be taken out. The whole journey takes about 13 minutes

Take out the bun and brush a layer of sugar water (appropriate amount of sugar and warm water, stir evenly) on the surface of the bun while it is hot. This will make the surface more beautiful and sweeter.
