Overview
This cake tastes more fragrant when eaten hot. The lingering heat brings out the sweetness of the red dates and the aroma of the cake. If I have another cup of hot lemon drink, even the air will become warmer on this spring afternoon that turns from warm to cold...!

The red decoration is a pomegranate bud. When I took the photo, I thought the color was too monotonous, so I rushed to the terrace and pulled one off.

Soak the red dates in advance, remove the cores, chop and set aside.

Line a baking sheet with oiled paper, sprinkle an appropriate amount of chopped red dates and set aside.

Egg separation.

Add 15 grams of sugar, cornstarch and milk to the egg yolks in sequence and mix well (mix each item before adding the next one).

Sift in cake flour.

Mix well until no white powder can be seen and it is fine and smooth. Set it aside for later use (over-mixing the batter may cause gluten).

Whip the meringue: Beat 4 egg whites with an electric beater to a rough foam, add the remaining 1/3 of the sugar, beat to a fine foam, then add 1/3 of the sugar, continue to beat until slightly textured, add the remaining sugar, beat until wet foam; (Wet foam: the egg beater is pulled up from the meringue, with a small hook) The meringue is ready.

Preheat the oven to 165 degrees for 20 minutes. Take 1/3 of the meringue and put it into the egg yolk batter basin, use a spatula to cut and mix evenly (flip it up and down, don't turn it in circles to avoid defoaming).

Pour the remaining portion of the egg yolk batter into the meringue bowl and mix evenly until it becomes a fine batter.

Sprinkle in chopped red dates and mix well.

Pour the batter into the baking pan, smooth the surface, place it on the table to gently knock out any air bubbles, and place it in the oven.

Middle layer, upper and lower heat, 165 degrees, 18 to 20 minutes.

After baking, take out the invert and tear off the parchment paper.

Let it dry until warm, put your favorite side down, apply syrup or honey (I applied a thin layer of honey), roll it up gently, set it for a few minutes, and cut into pieces.
