This kind of shell is called clam in Dalian, but here in my hometown they call it clam or sixty-year-old, but they are actually the same.   1. Bought clams, put them in water to spit sand, and add a few drops of sesame oil.

  3. Put the clams in a clean pot over high heat. There is no need to add water. The clams will spit out water on their own. Slowly, most of the clams will open their mouths slightly, so use a slotted spoon to take them out.

  4. Change the pan to hot and cool the oil. When the oil is hot, add the onion, garlic slices and small red pepper and sauté until fragrant. (If you want to eat spicy stir-fry, add a spoonful of Pixian watercress before sauteing the onion and garlic, and then saute the onion and garlic until the red oil comes out) Green pepper

  5. Pour in the spitted clams and stir-fry. Add a little salt and sugar, and pour in a little cooking wine. (Time was too tight and I didn’t have time to take pictures. I didn’t add much seasoning. If you like, you can add a little tempeh)

  6. Stir-fry evenly and then add green peppers. Remove from heat and serve. The taste is already very fresh, no need to add chicken essence.
