Sweet and sour fried eggs
Overview
This dish is a dish often made in the cafeterias of junior high and high schools. At that time, I didn’t like eggs, but I was very willing to eat sweet and sour ones. If it is hot summer, it will be even more appetizing when paired with this dish. And this dish is just as delicious when it’s cold. Normally the ones made in school add some green pepper, but I’m too lazy to make them anyway. It’s really nutritious, delicious and goes well with meals😀😀

Ingredients
Steps
-
First wash a tomato and chop it into small pieces and set aside
-
Then prepare a bowl of sweet and sour juice in advance: mix tomato sauce, sweet and sour salt, oyster sauce, starch and half a bowl of water evenly...
-
Heat the pan until it becomes more oily, add eggs and fry over high heat until the skin is crispy and brown, then take it out
-
If you want to eat something crispy on the outside and tender on the inside (such as candied eggs), fry it over high heat. If you want the eggs to be cooked, fry them slowly over medium-low heat
-
After frying the eggs, pour out the oil and leave a little bit of the base oil. Add the diced tomatoes over medium-low heat and stir-fry for about 1 to 2 minutes to get the flavor
-
Pour in the prepared juice and keep stirring to avoid starch clumping
-
Cook over medium heat until the soup feels thick. Add the fried eggs and stir-fry evenly to coat with the soup. Turn off the heat and serve on a plate ~
