Overview

Noodles mixed with scallion oil is Shanghai's signature delicacy. It is a home-made noodle dish with noodles as the main ingredient and scallion oil as the seasoning. The noodles mixed with scallion oil are delicious, tough and smooth.

  1. Put the green onion root part into the pot first and fry over low heat.

  2. Then add green onion leaves and continue frying over low heat until fragrant.

  4. Add cooking wine, light soy sauce, dark soy sauce, oyster sauce, and sugar, mix well and pour into the pot.

  6. Boil water in a pot to cook noodles (I used cold noodles).
