Overview
Noodles mixed with scallion oil is Shanghai's signature delicacy. It is a home-made noodle dish with noodles as the main ingredient and scallion oil as the seasoning. The noodles mixed with scallion oil are delicious, tough and smooth.

Put the green onion root part into the pot first and fry over low heat.

Then add green onion leaves and continue frying over low heat until fragrant.

Remove the green onion leaves.

Add cooking wine, light soy sauce, dark soy sauce, oyster sauce, and sugar, mix well and pour into the pot.

Stir fry until bubbling and serve.

Boil water in a pot to cook noodles (I used cold noodles).

Cook to desired doneness.

Take out the noodles, cool them several times, and put them on a plate.

Scoop 3 to 4 tablespoons of scallion oil mixture and add chopped chives.
