  1. Prepare a fresh potato.

  2. Peel the potatoes and cut them into thin strips. Soak them in water for ten minutes (I soaked them for an hour) to remove the starch and make them crispier.

  3. Remove and drain.

  4. Cut green and red peppers into small rings and set aside.

  5. Heat oil in a pan, add green and red peppers and stir-fry twice.

  6. Add the shredded potatoes and stir-fry for two to three minutes. Add appropriate amount of salt and white vinegar, stir-fry evenly, then turn off the heat and remove from the pan.
