Fresh toon buds only require relatively tender stems and buds. Clear and clean.

Boil water in a pot. After the water boils, add toona buds and blanch them. TV said that fresh toon sprouts contain nitrite, so they need to be boiled. Blanching does not affect its aroma.

Chop the blanched toona buds into pieces and set aside.

Break the eggs into a large bowl.

Add appropriate amount of five-spice noodles and salt, stir evenly.

Stirred egg liquid.

Heat a pan and pour in appropriate amount of peanut oil.

Pour one-third of the egg liquid into the pot and spread it into an egg pancake.

Sprinkle chopped toon sprouts on top of the set egg pancake. Be sure to use low heat when frying eggs.

After sprinkling the toon, pour in one-third of the egg liquid. Lower the heat, cover the pot, do not turn it over, and stir the egg cake. Let the freshly poured egg mixture solidify.

Take out the egg cake that has solidified in step 10.

Pour peanut oil into the pan again and pour in the remaining one-third of the egg mixture.

When the surface of the egg pancake in step 12 is slightly solidified, quickly flip it upside down and cover it with the egg pancake from the previous step (step 11). Cover the pot and let the eggs set.

After the eggs are solidified, you can take them out of the pan. Note that when frying the eggs, the heat is low the entire time. Pay attention to the heat.
