Add a little water to the carrots, spinach (blanch) and purple cabbage and squeeze the juice

Add carrots, spinach and purple cabbage to flour and knead three doughs

Wrap it in plastic wrap or a plastic bag and put it in the refrigerator for 20 minutes

Roll the dough into an oval cake of appropriate thickness, cut into strips with a width of about 1CM, use a tool to cut small strips of about 2-3CM in length, and pinch them in the middle with chopsticks, as shown in the picture

Use the same method to make butterfly noodles in the other two colors

Remove some of the butterfly noodles from each dough and roll the remaining dough into cake shapes. Stack them and cut them into strips. Stand the strips up and stick them together with water. Sprinkle some dry flour again, roll it into an oval cake shape and make butterfly noodles as before
