There are some fins, I bought about 15 here. Wash the fins you buy and clean them.

Coat the surface with a layer of fine salt, add about 2 tablespoons of cooking wine, and marinate for 15 minutes.

At the same time prepare onions and ginger. I like to steam the fish with scallions and sprinkle the chopped scallions on top at the end.

Steam in a pot, add chopped peppers, I used an electric steamer here, the time is about 25 minutes.

Don't take it out immediately after steaming. Wait until the steam subsides a little before taking it out of the pot. Since the fins themselves are relatively fat, it is not recommended to add hot oil. Remember to sprinkle some chopped green onion at the end!
