Fried peas with sausage
Overview
The seeds contain starch and oil, and have medicinal properties such as strengthening, diuresis, and antidiarrhea; the stems and leaves can cool and relieve heat; and can be used as green manure and feed. Peas are divided into two categories according to their uses: 1. Grain peas: Purple flowers may also be red or gray-blue. The stipules, leaf axils, bean stems and petioles are all purple-red. The seeds are dark gray or streaked, so they are also called hemp peas. They are used for grain and starch production, and are often cultivated as field crops. 2. Vegetable peas: The flowers are often white, without purple-red between the stipules and leaf axils, and the seeds are white, yellow, green, pink or other light colors. There are two types of fruit pods: soft pods and hard pods. The fruits of soft pods are edible when they are young. The fruits of hard pods have tough skin and the young seeds are edible, while the young pods are not edible. Varieties used as vegetables include small green beans, Shanghai white flower beans and other varieties.
