6-inch naked strawberry cake
Overview
The naked cake is a quick and simple cake among the birthday cake styles. It has low requirements for coating and mounting, and is suitable for novice bakers. After slicing the cake body, spread the cream and add fruits, stack them layer by layer, and decorate the surface directly with fruits such as strawberries, which greatly shortens the production time. Because there is no smearing around, the amount of cream consumed is greatly reduced, thereby controlling the caloric intake.

Add 2 grams of lemon juice, 1 gram of salt, and 33 grams of fine sugar (added in three times) to the egg whites and beat until stiff peaks form.

Add 13 grams of fine sugar, 20 grams of pure milk, and 33 grams of corn oil to the egg yolks, and stir until the sugar melts.

Then sift in the chiffon cake flour and mix until there is no dry powder.

Add one-third of the egg white batter to the egg yolk batter and mix evenly. Then pour it into the remaining protein paste and mix evenly, as shown in the picture.

Pour the batter into a 6-inch round removable bottom cake mold and shake to create large air bubbles. (Note: I made twice the amount, so I have two extra 4-inch heights)

Preheat the oven to 160 degrees for 5 minutes, then place the middle and lower layers, keep the top and bottom heat at 160 degrees, and bake for 40 minutes.

After completely cooling out of the oven, remove from the mold.

Divide the 6-inch chiffon cake into 3 slices.

Add 300 grams of whipped cream to 30 grams of caster sugar and beat until stiff. A layer of cake slices, a layer of fruit cream, and repeat.

There is no need to sandwich the fruit on the surface of the last layer, just smooth it directly. Use a spatula to remove excess cream from all sides of the cake.

Dry the washed strawberries and place them on the surface of the cake.

The skirt of the cake can be decorated with piping patterns, or it can be left as is. Finally, add chocolate chips, sugar beads for decoration, and sprinkle with moisture-proof powdered sugar to complete.
