The afternoon always feels a bit long, and I feel really sad if I don’t make some delicious food. The afternoon tea snack I bring to you today is based on Teacher Junzhi’s cranberry scone and evolved into a red bean scone. It was originally triangular, but in order to make the children like it more, I chose to use a cute cookie cutter to print it out, so it looks a bit like a cookie, but in fact it is a bread type! You may not be able to catch your eye just by looking at the surface. Only by trying it yourself will you know how delicious it is. It is perfect for afternoon tea!

Sift together low-gluten flour, baking powder and salt

Mix the sugar, softened butter and sifted flour, and rub with your hands until the butter and flour are completely mixed

The kneaded flour is in a granular state

Add the whole egg liquid and milk to the flour and knead it into a dough

The surface of the kneaded dough is shiny and not sticky. Do not over-knead the dough to avoid excessive gluten production that will affect the taste of the finished product

Use a rolling pin to roll the dough into a 2CM thick dough

Make a mold shape on the dough, then place it on a baking sheet lined with greaseproof paper, and brush a layer of egg yolk liquid on the surface
