Madeleine - a name that sounds very beautiful, and doesn’t its shape look cute? Take a bite and pair it with black tea, it's a heart-warming and stomach-warming afternoon tea. I have made Madeleine before. Apart from the appearance that surprised me, the taste did not make me want to make it again. In fact, I still have to find a recipe. This time I used the recipe from Rabbit a few years ago. I didn’t expect that I would fall in love with Madeleine all over again

Prepare the required materials. First heat the butter into a liquid. The recipe requires that it be boiled until it turns caramel color and filtered. I have tried it and the taste is not much different when it is heated and melted. I will not waste the materials and just boil it into a liquid.

Add the whole egg liquid to fine sugar and mix well with a whisk until the sugar dissolves

Beat the sugar and egg liquid slightly until the color becomes lighter

Cut the orange peel into fine dices or grind it into crumbs for later use (when I squeeze orange juice for my daughter to drink, I dice the orange peel and wrap it and store it in the freezer. It is more convenient when I need to use it)

Add the diced orange peel to the egg mixture and mix

Mix the flour and baking powder and sift

Add the sifted flour to the egg liquid and stir evenly

Add milk and mix well

Pour the melted and cooled liquid butter into the batter in three batches, stirring evenly each time before adding the next one

After mixing all the ingredients, wrap it in plastic wrap and let it rest in the refrigerator for 1 hour

Brush the madeleine mold with a thin layer of butter and refrigerate it so it won't stick and can be easily removed from the mold.

When the batter is taken out of the refrigerator, it needs to be warmed until the batter becomes fluid

Take a disposable piping bag and put it on the cup, put the batter into the bag

Pour the batter into the mold until it is 90% full. This is a large madeleine mold

This is a mini madeleine mold. The batter is also filled 90% full. If it is too full, it will be crooked when baked

Preheat the oven to 200 degrees, bake the small one for about 8 minutes, and the large one for 12-15 minutes

As the heat heats up, Madeleine puffs up her belly and bakes until the sides are slightly golden. The belly is a sign of Madeleine’s success
