Homemade date paste
Overview
It is healthier to make jujube paste by yourself. Xinjiang Xidahuang red dates are very sweet. When used to make jujube paste, it is very sweet without adding sugar. This is the natural sweetness of hanging from trees until they are mature. I wanted to make more and save it for mooncake fillings, but I didn’t expect that I would use up the cold cake in one go.

Pick and wash the red dates

Core and cut into pieces

Add an appropriate amount of water to the pot, put the pitted red dates into the pot and boil, bring to a boil over high heat, then simmer over low heat

Cook until the skin and meat are somewhat separated

Pour into a food processor and grind into jujube paste

Add appropriate amount of oil to the wok

Add jujube paste and stir-fry to release the water

Stir-fry until thickened

Remove from pan and cool until ready to use.
