Open the back of the shrimp and remove the shrimp line. At the same time, open the back to make it easier to absorb the flavor; marinate it with a little cooking wine, starch, and salt for a while

Prepare the sauce in advance: light soy sauce and vinegar 1:1, sugar and salt 1.5:1. The total sauce should just cover the amount of shrimp. If it is not enough, you can add a little warm water to help the sugar melt

Heat the pan with a little more oil and fry the shrimps

Fry the shrimp until both sides are red. After the red oil comes out, add the ginger slices first, then add a large amount of minced garlic and saute until fragrant
