Amaranth box
Overview
Amaranth is one of the most common vegetables in summer. Amaranth can replenish qi, clear away heat, improve eyesight, smooth the fetus, and benefit the large and small intestines. It can promote the growth of teeth and bones, maintain normal myocardial activity, and prevent muscle spasms. It also has the functions of promoting coagulation, increasing hemoglobin content, improving oxygen-carrying capacity, and promoting hematopoiesis. It can also help you lose weight and cleanse your body, promote detoxification and prevent constipation. I went back to my hometown during the Dragon Boat Festival and ate the amaranth box made by my sister. It had a long-lost taste. My mother used to make it for us. When I returned to the city where I worked, this afternoon I suddenly thought of the amaranth box and wanted to eat it. So I went home and cooked the same thing. It was a success~~~so satisfying~~

Knead the flour with cold water into a smooth dough and set aside. The dough should not be too soft. Wash the red amaranth and drain the water.

Cut amaranth into slightly smaller pieces.

Divide the dough into small dough balls and roll them into round sheets with a rolling pin.

Place the rolled out pancake on a pan lightly brushed with vegetable oil, and place the amaranth on top of the pancake.

Repeat step 3, cover the other thin pancake on top, press the overlapping edges of the two pancakes slightly, and cover the pot.
