Heat butter and milk to soften the butter and set aside

Beat the egg whites and egg yolks in two oil-free and water-free basins respectively. Add a quarter of the sugar to the egg yolks and beat until thick.

Add the remaining caster sugar to the egg whites in three batches and beat until dry (when you lift the egg beater, there will be upright sharp corners)

The beaten egg whites are mixed with the egg yolks in three batches, the first three times the egg whites are folded into the egg yolks, and the last three times the egg yolks are folded into the egg whites.

Sift in the flour in two batches, mix well with your hands

Add the milk and butter mixture and mix well.

Place the batter into a piping bag and fill the mold a quarter full.

Bake in the preheated oven for five minutes, 190 degrees, middle rack, upper and lower heat. Take out the crust and put jam on it.

Pour the remaining batter into the mold eight-quarters full, then place it in the oven and bake again. Bake for a total of 20-25 minutes.
