Overview

It was my first time to buy a live chicken. I was a little nervous when I bought it. Hahaha, I asked the boss to take care of it and chop it into pieces. I didn’t know what kind of chicken it was and I forgot to ask when I bought it. It was so fresh. I bought the rest of the ingredients and hurried back to make it. The soup tasted so good that I could drink two big bowls of it. It was so satisfying.

  1. Soak the dried shiitake mushrooms and razor clams in advance and wash them

  2. Chop the chicken into pieces and wash them clean.

  3. Add water to the pot, add ginger slices, and blanch the chicken to remove the blood and some fishy smell

  4. Rinse the blanched chicken under cold water

  5. Put all the ingredients into the pressure cooker, add an appropriate amount of water, set the timer for 20 minutes, and keep warm for 20 minutes

  6. Add salt and chicken essence to the pot. It tastes good. The essence is in the soup. It goes well with rice and noodles.
