Poached Osmanthus Rock Sugar Egg Poach

Sweet, with a strong sweet scent of osmanthus, and egg yolk like crab roe, refreshing and not greasy.

fresh wood-fired eggs, washed.

Appropriate amount of rock sugar.

Bring an appropriate amount of water to a boil in a pot and add rock sugar.

Cook until the rock sugar melts and turn off the heat.

Beat in eggs.

Stop for a minute or two until the egg liquid solidifies, then turn on low heat.

Use a small spoon to gently push away from the bottom of the pot to prevent the bottom from being burnt and affecting the taste.

Flip over in about 2 minutes. Sprinkle in dried osmanthus.

Cook for about a minute and turn off the heat. I like it very cooked and simmered for a while. Mine is a soft-boiled poached egg.
