Wash the front leg meat, cut into small pieces, add soy sauce, chicken essence, cumin powder and corn starch and stir evenly.

Peel the potatoes, cut into strips, wash off the starch, and soak in water.

Heat the oil in a pan over high heat, add the meat pieces, and fry over medium heat until lightly browned on both sides.

Remove potatoes and add to pot.

Sprinkle a little salt on the potatoes and fry over medium-low heat until the potatoes change color.

Open the lid and flip it.

Cover and simmer until the water dries out and the potatoes are cooked.

Open the lid, add chopped green onion and chopped pepper, then sprinkle in cumin powder, stir-fry evenly and remove from heat.

Plate and enjoy.
