Overview

The combination and change of ingredients is what I like the most about this dish. The flavors are intertwined layer by layer, different sourness and different sweetness, different aromas and different saltiness, all come from the original taste of the ingredients, plus frying first and then mixing, first hot and then cold. It is a delicious dish that is clever and easy to achieve. You will gain a lot if you understand and cook this dish!

  1. Add about 1/3 cup of olive oil to the pot and heat over medium heat until the sausage is crispy, about 10 minutes. Add the garlic slices after 5 minutes

  2. Cut the tomatoes in half

  3. Squeeze the olives with your hands and break them apart, then place them in a mixing bowl

  4. When the sausage is crispy and golden, pour in the sherry vinegar

  5. Wait for the sour gas to dissipate leaving only the aroma, then pour the sausage and garlic red oil into the mixing bowl containing the tomatoes

  7. Chop the onions into fine pieces

  8. Stir chopped scallions and torn basil into a mixing bowl

  9. Mix thoroughly and season with salt and black pepper before serving. Serve with orange pulp (how to get the orange pulp will be explained in detail in the diary), oregano and chicory. If you like, you can also add some thinly sliced radish. Pour over the sauce in the mixing bowl and enjoy
