Waffles, before there were Waffle moulds, I often went to bakeries to buy them, took them home, and ate them slowly. At that time, eating waffles was a luxury. In my mind, they were sprinkled with powdered sugar...but it didn’t have my favorite chocolate sauce or fresh fruit, and the taste was a bit dull. From now on, I have endless waffles because I have small lattice vanilla waffles, no baking powder version, the method is similar to the basic chiffon cake. Mix the egg yolk paste and egg white cream to form the basic batter. Eat it hot, crispy on the outside and soft on the inside. Try it for breakfast or afternoon tea

Prepare raw materials a. Separate egg whites and egg yolks b. Sift low-gluten flour and set aside c. Melt butter

Beat the egg yolks with caster sugar until slightly white, add milk and beat evenly

Add 2-3 drops of vanilla extract, add melted butter and beat evenly

Add the sifted low-gluten flour in two batches and stir evenly until there are no particles and fine texture

Add the caster sugar to the egg whites in 3 batches and beat until stiff peaks form (upright peaks)

Mix the egg yolk paste and egg white cream evenly

Pour the batter into the mold and heat it to 175 degrees for about 25 minutes

Unmold while hot and turn upside down
